Years ago, when I worked for Carvel, the rainbow was one of the biggest sellers. Cakes made with a rainbow were always in stock because all girls liked rainbows.
Now, the rainbow cake takes on a whole new meaning. No longer does it refer to the cake decoration. It is referring to the cake inside. A rainbow cake begins with white cake mix. When you use white, the tinted color will come out truer. Divide the batter up into different bowls and tint the batter using either gel food coloring or paste food coloring.
Put one color in to the pan at a time, placing the subsequent color into the middle of the one before it. Don’t spread the batter or you will mess up the effect. Just tap the pan, bake, and you’ve got a rainbow cake.
